Lasagna Soup (yes, the same soup I poured into my computer on Monday) - this was such a find and how could you not love something that has "cheesy yum" as a hidden surprise?! So worth the time to make it. If you're concerned about carbs or making it diet friendly, I totally South Beached it by using the low-carb noodles (Dreamfields - Rotini noodles), skim/low-fat cheese (including the ricotta), and turkey Italian sausage. It was delish! For the record, Farmgirl adapted this recipe from 300 Sensational Soups, which I have a feeling I'm going to have to pick up on Amazon as this was such a winner.
I'm in the midst of reading Bill Bryson's book about Australia, In a Sunburned Country, and it is stirring desires in me to travel, not only to Australia, but to other locals around the globe. I've read two other books by Bryson (I'm a Stranger Here Myself and Notes from a Small Island), but with the notable exception of Bryson's take on the ability to buy a canoe at L.L.Bean at 3 AM, I've found In a Sunburned Country to be a more entertaining book. I've been sucked in by it and now want to make plans to travel Australia (as soon as the house is paid off, of course).
And finally, I'll leave you with these two Pinterest finds. Encouraging thoughts to get you through your Thursday and make it to Friday and the week-end. Today, I choose joy. Today, I will be grateful for what I have, rather than wishing for things I don't.
What about you? What have you been discovering/enjoying this week? Do share!
